Kawasaki 1981, Bot. 2009, Closed Distilleries
Now closed, the distillery Kawasaki preparing a single grain that bore the name of his hometown. Having got hold of a few barrels, Ichiro Akuto, owner of the Chichibu distillery, we had enjoyed in May 2009, during a visit to the distillery, a superb 1976 and 1981 while the hairline, both aged in barrels sherry. Enthused, we could not resist the urge to make you discover these two vintages.
Color: old gold to amber reflections. Nose: intense, complex. Vanilla, cereal and fruit preserves (apricot, orange) are juxtaposed with elegant hints of wax (Wax), box of cigars, mead and mango. Some herbs (verbena, sage) confirm its heady character. The dry extracts highlight the quality of its woodland (oak barrels, liquorice). Mouth: nervous, decided. The pleasant minty freshness, its creamy notes (vanilla, coconut) and praline are forgetting the "violence" of the first moments. Floral (honeysuckle, lily), it operates on more notes vegetable (zucchini flower). Finish: long, sleek. Milk chocolate, ginger, cinnamon and wood burned remind the world of bourbon. Then, cilantro, basil and oregano medicinal temper his character and balsamic (camphor, pine resin).
